Enzimas Digestivas

Probablemente ya ha escuchado hablar sobre las enzimas y probablemente usted ya sabe lo importantes que son para la digestión. Pero quizá usted no esté enterado de lo necesarias que son las enzimas para todas las células de su cuerpo- no sólo para la digestión, sino para TODOS los procesos fisiológicos.
Las enzimas están compuestas por aminoácidos y son segregadas por su cuerpo para ayudar a catalizar funciones que normalmente no se producen a temperaturas fisiológicas.
Se han identificado más de 3,000 enzimas diferentes y algunos expertos creen que podrían existir otras 50,000 que aún no son descubiertas. Cada enzima tiene funciones diferentes- como las 3,000 llaves especializadas que están diseñadas para abrir 3,000 candados diferentes. En esta analogía, los candados son las reacciones bioquímicas.
Las enzimas impulsan los procesos biológicos necesarios para que su cuerpo construya materias primas, nutrientes, elimine las sustancias químicas no deseadas y la miríada de otros procesos biológicos que tienen lugar y usted ni se lo imagina.
Para empezar, aquí hay algunas de las actividades en su cuerpo para las cuales se necesitan enzimas:
  • Producir energía
  • Absorber oxigeno
  • Combatir infecciones y sanar heridas
  • Reducir la inflamación
  • Obtener nutrientes de las células
  • Desechar los desperdicios tóxicos
  • Convertir las grasas en la sangre, regular el colesterol y los niveles de triglicéridos
  • Disolver los coágulos de sangre
  • Regular las hormonas de manera adecuada
  • Disminuir el proceso de envejecimiento
Y las enzimas en pequeñas cantidades pueden tener un impacto profundo. Las enzimas son la catálisis que provocan que muchas de las reacciones químicas tengan lugar- sin embargo, no se “gastan” en esas reacciones. Simplemente, se limitan a ayudar, aceleran las reacciones- algunas veces provocan millones de reacciones por segundo.
Las enzimas disminuyen la cantidad de energía que se necesita para que ocurra una reacción. Sin ellas, algunas reacciones simplemente no se llevarían a cabo.
Pero las enzimas no trabajan solas.
Las enzimas dependen de otros elementos que les ayudan a cumplir sus tareas, como ciertas vitaminas y minerales. Estos elementos son conocidos como “coenzimas”.
Probablemente esté familiarizado con una de ellas en especial- la coenzima Q10. La CoQ10 se encuentra en la mitocondria (centros de poder) de sus células, en donde se encarga de producir ATP, la principal fuente de energía de las células. Otro ejemplo es el magnesio, que tiene participación en más de 300 reacciones enzimáticas. 

El Concepto de “Potencial de Enzimas”

El Dr. Edward Howell pasó toda su vida profesional estudiando las enzimas y puede ser acreditado por la investigación de las catalización de enzimas.
Sea verdad o no, Howell creía que nacemos con un capacidad limitada para producir enzimas y la expansión de su vida depende de que tan bien preservemos el “potencial de las enzimas”. Su teoría era que si no se obtienen las enzimas suficientes de los alimentos que comemos, se crea una gran tensión en el sistema digestivo, por ejemplo produce solo las enzimas necesarias para realizar la tarea.
Entonces, una deficiencia de enzimas digestivas reduce la disponibilidad de las enzimas metabólicas. Howell creía que este déficit de enzimas metabólicas era la causa principal de la mayoría de los problemas de salud crónicos.

Principios Básicos sobre las Enzimas

Existen tres categorías básicas de las enzimas:
  1. Digestivas
  2. Metabólicas
  3. A base de alimentos
Las enzimas digestivas, como su nombre lo dice, ayudan a descomponer el alimento en partes pequeñas para que pueda ser absorbido, transportado y utilizado por cada célula en su cuerpo. Las enzimas digestivas son extra-celulares, es decir, se encuentran fuera de las células.
Las enzimas metabólicas son intra-celulares, es decir se encuentran dentro de las células, en donde ayudan a la célula a realizar una variedad de funciones relacionadas con la reproducción y reposición.
Su páncreas produce la mayoría de las enzimas digestivas y metabólicas.
Afortunadamente, usted obtiene (o debería obtener) muchas enzimas de los alimentos que consume- en particular, de los alimentos crudos. Estos ayudan directamente con el proceso digestivo.
Mientras más alimentos crudos consuma, menor será la carga de enzimas que necesitará producir su cuerpo, no sólo para la digestión sino para prácticamente todo. Las enzimas que no se utilizan para la digestión están disponibles para ayudar con otros procesos fisiológicos muy importantes.

El Viaje que Hace su Comida para llegar Hasta el Sistema Digestivo

Una vez que es consumida, su comida empieza un complicado viaje de varias fases para descomponer y convertir los nutrientes que su cuerpo puede utilizar. Este proceso es, por supuesto, llamado digestión y las enzimas desempeñan un papel clave en este proceso.
Existen ocho enzimas digestivas principales, cada una diseñada para ayudar a descomponer distintos tipos de alimentos:
  1. Proteasa: digiere proteínas        
  2. Amilasa: digiere carbohidratos
  3. Lipasa: digiere grasas
  4. Celulasa: descompone la fibra
  5. Maltasa: convierte los azúcares complejos de granos a glucosa
  6. Lactasa: digiere el azúcar de la leche (lactosa) en productos lácteos
  7. Fitasa: ayuda con la digestión en general, en especial con la producción de la vitamina B
  8. Sacarosa: digiere la mayoría de los azúcares
La digestión comienza en su boca, gracias a la saliva. ¿Sabía que usted produce cerca de 1.7 litros de saliva al día? Su boca es el lugar en donde las enzimas (principalmente la amilasa) comienzan a ejercer sus acciones. La amilasa en su saliva comienza a descomponer los carbohidratos.
En cuanto sus alimentos pasan por su estómago, las proteínas son digeridas por la proteasa. De ahí, el alimento pasa por su intestino delgado, en donde la lipasa empieza a descomponer las grasas y la amilasa acaba con los carbohidratos.
¿Sabía que el 90 por ciento de su digestión y absorción tienen lugar en su intestino delgado?
A partir de ahí, los micronutrientes son absorbidos en el torrente sanguíneo por medio de millones de pequeñas vellosidades en la pared de su intestino. ¿Pero qué pasa cuando este proceso falla?
Enfermedad- o “malestar”.

Las Consecuencias de la Dieta Occidental: Deficiencia de Enzimas

Las insuficiente producción de enzimas es la causa de muchos de los “problemas estomacales” en nuestro país. Los problemas digestivos le cuestan a los estadounidenses unos $50 billones al año, en costos directos y las faltas al trabajo.
Es un hecho triste que el 90 por ciento de la comida de los estadounidenses sean alimentos procesado. La alimentación rica en alimentos procesados, azucarados y altamente cocinados, en combinación con uno uso excesivo de los medicamentos farmacéuticos como los antibióticos, agotan la capacidad de su cuerpo para producir enzimas.
Las enzimas podrían ser relativamente grandes, pero su estructura proteínica es frágil. Los aminoácidos en la cadena molecular se unen para crear ciertos patrones y formas, lo que le da a las enzimas características y funciones únicas.  Cuando algo altera la estructura de la cadena, la enzima se vuelve “desnaturalizada”- cambia de forma y pierde su capacidad para trabajar.
Calentar sus alimentos a más de 116 grados F hace que la mayoría de las enzimas se vuelvan inactivas.
Esta es una de las razones por  la que es tan importante comer sus alimentos crudos. Los alimentos crudos son ricos en enzimas y consumirlos disminuye la carga de su cuerpo para producir sus propias enzimas. Mientras más alimentos crudos pueda consumir, mejor. Lo ideal es que el 75 por ciento de las enzimas digestivas provengan de sus alimentos.
Además del calor, las enzimas también son muy sensibles a los cambios en el pH, que es la razón por la que las diferentes enzimas trabajan en diferentes partes de su tracto digestivo, en base al pH que cada enzima necesita para funcionar.
La deficiencia de enzimas da como resultado la mala digestión y la mala absorción de nutrientes. Esto provoca una variedad de síntomas gastrointestinales, incluyendo:
  • Estreñimiento
  • Hinchazón
  • Calambres
  • Flatulencia y eructos
  • Acidez y reflujo ácido
La malabsorción crónica puede provocar una variedad de enfermedades. Piénselo- si su cuerpo no tiene los bloques de construcción nutricionales básicos que necesita, su salud y capacidad para recuperarse de un enfermedad se verá comprometida.
Además de descomponer los alimentos, las enzimas (la proteasa en particular) pueden ayudar a sanar el intestino, controlar los patógenos y reforzar el sistema inmunológico. Su sistema inmunológico comienza en su intestino- si usted tiene problemas digestivos y con las enzimas, es probable que su sistema inmunológico no esté funcionando como debería.
Para complicar las cosas, su capacidad para producir enzimas también disminuye con la edad.

Cómo Afecta el Envejecimiento Su Capacidad para Producir Enzimas

Las investigaciones han demostrado que la producción natural de enzimas comienza a deteriorarse al momento en el que está a punto de cumplir veinte años.
Los estudios demuestran que, cada diez años, la producción de enzimas disminuye un 13 por ciento. Así que para los 40 años, su producción de enzimas podría ser 25 por ciento menor de lo que era cuando era niño. Y para cuando tenga 70 años, usted podría producir sólo un tercio de las enzimas que necesita.
Para empeorar las cosas, su estómago produce menos ácido clorhídrico a medida en que envejece y el ácido clorhídrico es crucial para la activación de las enzimas digestivas.
Cuando la digestión de alimentos requiere de una fuerte demanda, los suministros de enzimas se agotan y la capacidad de producir más enzimas se ve comprometida. ¿Por qué es esto importante? La gran demanda de enzimas digestivas reduce la producción de enzimas metabólicas, las cuales son necesarias para que las células de su cuerpo puedan funcionar.

Los Diferentes Roles de las Enzimas Metabólicas

Ahora que conoce la importancia de las enzimas digestivas y su papel para obtener nutrientes, echémosle un vistazo a otro tipo de actividad enzimática, sus enzimas metabólicas. Las enzimas metabólicas están estrechamente relacionadas con los sistemas, circulatorio, linfático, cardiaco, neurológico, endocrino, renal, hepático y reproductivo, también mantiene su piel, huesos, articulaciones, músculos y otros tejidos.
Cada una de sus 10 trillones de células depende de estas enzimas y su capacidad para catalizar la producción de energía. Como lo dije anteriormente, cada una de estas enzimas está altamente especializada en una función de su estructura molecular en particular.
Considere estos dos ejemplos:
  • La polimerasa RNA es una enzima que su cuerpo utiliza para trascribir el ADN en ARN, que es utilizado para producir proteínas
  • La enzima lisosomal, producida en el lisosoma de cada célula (también conocida como “la bolsa del suicidio”), descompone las macromoléculas y otras partículas extrañas que la célula ha ingerido (como bacterias) para que puedan ser eliminadas. El lisosoma es un triturador de basura microscópica.
Una de las funciones más importantes de las enzimas metabólicas se lleva a cabo en su sangre. Si lo piensa, tiene sentido. Sabemos que las bacterias, hongos y parásitos están compuestos  de proteína, ya que es el escudo que cubre los virus. Las enzimas en su sangre, la proteasa principalmente (enzimas proteolíticas)- sirven para descomponer los cuerpos extraños a base de proteína y limpiar la sangre de manera efectiva.
Como limpiadoras de sangre, estas enzimas combaten las inflamaciones crónicas, que si no se combaten pueden provocar cualquier tipo de enfermedad autoinmune, desde enfermedades cardiovasculares hasta cáncer. Las enzimas reducen la inflamación en su cuerpo:
  1. Descomponiendo las proteínas extrañas en la sangre que causan inflamación y facilitan su eliminación a través de torrente sanguíneo y sistema linfático
  2. Removiendo la “fibrina”, un material coagulante que puede prolongar la inflamación
  3. Reduciendo el edema en las regiones inflamadas
Lo que sigue es que cualquier enfermedad causada por la inflamación- que son prácticamente todas las enfermedades crónicas a las que nos enfrentamos hoy en día- puede verse afectada de manera positiva por el aumento en los niveles de enzimas funcionales en su sangre.
Hablaré de la suplementación oral de enzimas en breve. Aunque tomar un suplemento de enzimas podría ser útil, NINGÚN producto fabricado puede duplicar los efectos positivos de una alimentación rica en nutrientes.

Aumentar sus Niveles de Enzimas de Manera Natural

Existen cuatro maneras de aumentar los niveles de enzimas de manera natural:
  1. Aumentar el consumo de alimentos crudos
  2. Comer menos calorías
  3. Masticar bien la comida
  4. Evitar mascar chicle
La mejor manera para obtener las enzimas es consumiendo al menos el 75 por ciento de sus alimentos crudos. Para muchos de ustedes, tendrán que intentar alcanzar esta meta poco a poco.
Aunque todos los alimentos crudos contienen enzimas, los alimentos que más enzimas contienen son los que retoñan (semillas y legumbres). El retoño aumenta el contenido de enzimas en estos alimentos enormemente. Además de los alimentos que retoñan, otros alimentos ricos en enzimas son:
La mejor manera de aumentar las enzimas metabólicas es proporcionándole a su cuerpo las materias primas y la energía que necesita para producirlas. Comer este tipo de alimentos le ayudará a su cuerpo con los aminoácidos y enzimas necesarias para aumentar la producción natural de enzimas.
Otra manera de disminuir la demanda de enzimas del cuerpo es reduciendo el consumo calórico. ¿Sabía que la persona promedio gasta el 80 por ciento de su energía digiriendo los alimentos?
Reduciendo el consumo excesivo, así como consumiendo más alimentos vivos, le ayudarán a reducir la necesidad de más enzimas digestivas, lo que permitirá que su cuerpo utilice más energía produciendo enzimas metabólicas.
Lo que nos lleva a la forma de masticar. Lejos del placer estético de una comida sin prisa, están las razones fisiológicas de masticar los alimentos correctamente.
Masticar estimula la producción de saliva y mientras más tiempo pase masticando, más tiempo tendrán las enzimas para trabajar en su boca, disminuyendo la carga de trabajo de su estómago e intestino delgado. Masticar también estimula un reflejo que envía un mensaje al páncreas y a otros órganos digestivos- “Prepárense que ya vamos”
Y no mastique chicle.
Masticar chicle engaña al cuerpo haciéndolo creer que está digiriendo algo, por lo que produce enzimas digestivas innecesariamente.  ¿Para qué desperdiciar esos preciados recursos?

La Suplementación con Enzimas Digestivas

Si usted sufre de hinchazón ocasional, malestar abdominal leve, y estreñimiento ocasional y sospecha que su producción de enzimas es baja, es posible que quiera considerar un suplemento de enzimas digestivas, además de consumir más alimentos crudos.    
Las enzimas digestivas se deben tomar CON una comida. Hay cientos de marcas en el mercado, así que, ¿cómo elegir una buena? Usted debe buscar una fórmula de enzima con las siguientes características:        
  • Debe contener una mezcla de diferentes tipos de enzimas, para ayudar a digerir todos los diferentes componentes de su alimentación (incluyendo la lipasa, proteasa, y amilasa)
  • Los ingredientes deben ser de alta calidad, totalmente naturales y libres de alérgenos y aditivos        
  • El suplemento debe llevar una etiqueta con la fuerza enzimática de cada ingrediente, no sólo su peso        
  • Debe estar hecha por una empresa de renombre con el riguroso control de calidad y pruebas para la potencia    
Además de los suplementos de enzimas digestivas, hay otras maneras de utilizar las enzimas orales - para uso sistémico. Esto requiere la toma de enzimas entre comidas para que puedan ser absorbidas a través de su intestino y en el torrente sanguíneo, donde las células pueden utilizarlas metabólicamente.

Las Enzimas Sistémicas-  Se Rencuentra Con La Medicina Europea

Llevar las enzimas del tracto digestivo al torrente sanguíneo no es tan fácil como parece. Como ya lo hemos discutido, las enzimas son muy susceptibles a la desnaturalización y deben ser ayudadas para sobrevivir al ambiente altamente ácido del estómago. Muchas veces reciben un “recubrimiento entérico” para ayudarlas a sobrevivir al viaje del tracto digestivo.
Y después, está el problema de la absorción.
Durante casi 100 años, el dogma médico insistió que las enzimas tomadas de manera oral eran muy largas para poder pasar la pared del tracto digestivo.
Sin embargo, existen muchas nuevas investigaciones que afirman que pueden pasar a través del intestino, torrente sanguíneo y sistema linfático, en donde pueden ofrecer sus servicios hacia el resto del cuerpo…uno de los misterios de la ciencia médica.

Este uso sistémico de las enzimas está siendo llevado a los Estados Unidos.
Es crucial que, con el fin de utilizar las enzimas sistémicamente, estas deben ser ingeridas con el estómago vacío. De otra forma, su cuerpo lo utilizará para digerir los alimentos, en lugar de absorberlo en la sangre y que trabaje ahí.
Echemos un vistazo a cómo las enzimas sistémicas pueden beneficiar su salud examinado la aplicación de dos de los principales problemas de salud que enfrentamos en la actualidad: las enfermedades cardíacas y el cáncer.

Cómo las Enzimas Sistémicas Combaten las Enfermedades Cardíacas

En la actualidad es bien conocido el hecho de que los ataques cardíacos y derrames cerebrales están relacionados con la inflamación, que es la razón por la que la proteína C-reactiva (marcador de inflamación) puede ser predictivo en eventos cardíacos.
Sin embargo, de acuerdo con excelente artículo sobre enzimas sistémicas por Michael Sellar, investigadores franceses han propuesto que la bacteria podría ser un factor causal en las enfermedades coronarias. Se encontraron niveles muy altos de bacteria en sus pacientes con placas arteriales, lo que posiblemente explica las elevaciones de la proteína C- reactiva.
La proteína C-reactiva trabaja deteniendo la propagación de la bacteria en su cuerpo.
Puesto que las enzimas inhiben la agregación plaquetaria, ayuda a que su sistema inmunológico combata los patógenos y a romper la fibrina (lo que provoca los coágulos), podrían ofrecer importantes beneficios para las enfermedades vasculares como lo trombosis, flebitis y varices.
Sellar cita al investigador de enzimas Rudolph Kunze:
“A pesar de que las enzimas reducen la inflamación, solíamos pensar que era todo lo que hacían, ahora creemos que son el objetivo central de las enzimas sistémicas es el sistema inmunológico. Es mi creencia que las enfermedades cardíacas son un enfermedad inmune, aunque obviamente no del todo, relacionadas con patógenos bacterianos y otros invasores.”

Las Enzimas Sistemáticas para el Tratamiento del Cáncer

El uso de enzimas para tratar el cáncer tiene sus raíces en la década de 1911 con el Tratamiento Enzimático contra el Cáncer y sus Bases Científicas de John Beard. Beard creía que el cáncer era el resultado de la disminución de las enzimas pancreáticas, lo que impide la respuesta inmune.
Un estudio realizado en 1999 sugiere que él podría haber tenido razón.
Diez pacientes con cáncer de páncreas fueron tratados con grandes dosis de enzimas pancreáticas orales (junto con una desintoxicación y una alimentación orgánica) y su tasa de supervivencia fue de 3 a 4 veces más alta que la de los pacientes que recibieron un tratamiento convencional. Las enzimas proteolíticas pueden ser de utilidad en el tratamiento del cáncer porque ayudan a restaurar el equilibrio en el sistema inmunológico.
El Dr. Nick Gonzales de Nueva York también ha estudiado mucho las enzimas en el tratamiento del cáncer y ha escrito un libro sobre el tema.
  • Aumentando las citocinas, en particular el factor interferón y necrosis tumoral, que son guerreros importantes que destruyen las células del cáncer
  • Disminuyendo la inflamación
  • Disolviendo la fibrina: las células cancerosas se esconden debajo de una capa de fibrina para no ser detectados. Una vez que las células cancerosas están a la vista, pueden ser atacadas por el sistema inmunológico. También se cree que la fibrina hace que las células de cáncer se “unan”, lo que aumenta la probabilidad de metástasis.
  • Los estudios alemanes han demostrado que las enzimas sistemáticas aumenta la potencia de los macrófagos y mata las células 12 veces.
Esperemos que ahora pueda apreciar la importancia de las enzimas para la salud en general, justo a nivel celular. Una vez que entienda esto, usted podría comenzar a darse cuenta de la importancia de comer alimentos frescos, crudos y orgánicos. Incluso podría probar algunos vegetales en forma de jugo para obtener más nutrientes y enzimas en su cuerpo.
Se dice: “Usted es lo que come”, pero “usted es lo que digiere” se acerca más a la realidad.

In a previous article I discussed the nutritional considerations of eating vegetables raw or cooked. The research showed strong support for eating a combination of raw and cooked vegetables, because both options provide nutritional benefits.
I am sure that some who read the first article are concerned about enzymes. They have chosen to eat vegetables raw for the sake of enzyme preservation. Food is considered raw when it has not been heated above 116-118 degrees F. The discussion of enzymes and raw food naturally leads to a consideration of the lifetime work of Dr. Edward Howell, author of Enzyme Nutrition.1 Dr. Howell advocated a raw food diet to protect the naturally occurring enzymes that are in food, thinking that would preserve the enzymes that are in the human body. He believed this would provide for optimal health and longevity. His theory has 4 main points:
  1. Enzymes in raw food contain the “life force,” which is transferred to the body when the food is eaten. This “life force” enhances vitality and longevity. When cooked food is eaten, the body must use up some of its own “life force”/”enzyme potential,” because cooked food does not contain any life force/live enzymes.
  2. The enzymes present in raw foods provide significant help for the digestion of the foods themselves once the foods enter the human digestive system.
  3. The body has a finite “enzyme potential” for manufacturing digestive enzymes, which must be preserved to promote health and longevity. The body permanently depletes a portion of its enzymes whenever cooked food is eaten.
  4. Cooking destroys the enzymes in raw food, which forces the body to produce more of its own digestive enzymes than would otherwise be necessary to digest the food.2
Scientific research has advanced in many areas since Dr. Howell wrote his book. As a result I think it is desirable to take a fresh look at his enzyme theory. I took time to read through Dr. Howell’s book,Enzyme Nutrition, published in 1985. I will share some of what I observed.

Presuppositions

Presuppositions are foundational beliefs that research is built upon. Often we don’t examine our presuppositions because we think that our beliefs are so obvious that no one would ever question them.
At one time in history, everyone believed that the world was flat. This is an example of a presupposition that was ultimately replaced as new information became available. The adoption of the new supposition brought substantial change to scientific research in physics. Let’s take a look at some of Dr. Howell’s presuppositions and teachings to see how they stand up over time. I have stated my interpretation of Dr. Howell’s presuppositions as bold headings. I will begin by addressing the four main points stated above concerning his theory, and then add some additional considerations.

Enzymes are Life

Main Point 1: Enzymes in raw food also contain the “life force,” which is transferred to the body when the food is eaten. This “life force” enhances vitality and longevity. When cooked food is eaten, the body must use up some of its own “life force”/”enzyme potential,” because cooked food does not contain any life force/live enzymes.
The Forward to Dr. Howell’s book states,
For enzymes operate on both chemical and biological levels, and science cannot measure or synthesize their biological or life energy.
This biological force is the very core of every enzyme. Various names such as life energy, life force, life principle, vitality, vital force, strength, and nerve energy have been offered to describe this energy. Without the life energy of enzymes we would be nothing more than a pile of lifeless chemical substances—vitamins, minerals, water, and proteins. (page viii, Enzyme Nutrition)
Most certainly, enzymes are an important part of living organisms, but do they actually contain life itself? Dr. Howell elevates enzymes above all other elements of nutrition and dietary health by giving them the unique place of being a life force. This is only a theory. He presented evidence showing that enzymes contain energetic emanations as measured by Kirlian photography, but these electro-magnetic emanations are not life itself. To make such statements is to offer a presupposition without scientific proof.

Enzymes in Food are Aids to Digestion

Main Point 2: The enzymes present in raw foods provide significant help for the digestion of foods themselves once the foods enter the human digestive system.
Dr. Howell states,
Upon reflection, it becomes obvious that enzymes exist in all living things and become food enzymes when the food is eaten. But until I found out how ultrasensitive enzymes are to heat, I did not realize that the human race had been trying to get along without a whole category of food ingredients since cooking began. (page 121)
I tried to find research that supports the theory that the enzymes contained in the raw food we eat actually become digestive enzymes once we consume the food. This is a very common belief. But, I was unable to find any scientific proof for it.
There are two types of enzymes. Those that exist within the cells of living organisms, and in the case of organisms that have complex digestive systems containing stomachs and intestines, there are digestive enzymes. I could not find confirmation that the enzymes in our food will become digestive enzymes once the food has been consumed.
I suspect that the enzymes in food are actually destroyed by stomach acid. I also wonder about the very small amount of naturally occurring enzymes that are contained in many leafy vegetables. Are there really enough enzymes to produce a digestive effect? The enzymes in vegetables help the plant decompose in the natural environment. But, I cannot find any scientific evidence that the natural plant enzymes digest food in the stomach. This appears to be speculation.
Dr. Howell states,
The aging of meat and game to promote its tenderness and enhance its flavor has been practiced for a long time. The aging process consists of keeping the product at the proper environment of moisture and temperature. This allows the enzyme cathepsin within the tissues to slowly digest the hung meat by a process not unlike that which occurs in the digestive tract and which is known as autolysis. This is a good example of the operation of food enzymes. In those carnivores swallowing an entire animal, the catheptic enzymes of the prey become food enzymes and act the same way in the stomach of the host as they do when aging meat. (page 41, Enzyme Nutrition)
The enzymes in plants and animals certainly work in the natural environment to degrade the organisms (to recycle it) after it dies. However, do enzymes work that way in the human digestive system? Once again this is speculation. The natural function of the human digestive system is to breakdown and digest all parts of the food we eat. The enzymes in food are not somehow selectively preserved so that they can digest food. They are digested by the body along with all the other components of the raw food that we eat.

Every Organism will Die when Its Finite Amount of Enzymes have been Exhausted

Main Point 3: The body has a finite “enzyme potential” for manufacturing digestive enzymes, which must be preserved to promote health and longevity. The body permanently depletes a portion of its enzymes whenever cooked food is eaten.
Dr. Howell stated,
We can learn from this research that if you have young enzymes at age 80 you should be in the prime of life—not old. If you take in enzyme reinforcements during the younger years, your enzymes at 80 will be more like those at 40. (page 28)
Dr. Howell focused his medical career on promoting the consumption of raw food, based on the belief that every living organism was born with a finite amount of enzymes, and when these enzymes were used up, the organism would die. Thus, he taught that people should eat as much raw food as possible, because if food does not contain enzymes, then we must use our own storehouse of enzymes to digest food, which will eventually exhaust our finite supply. Death occurs once enzymes have been depleted. He relied on various insect and animal studies to try to prove his theory. The studies measured total enzyme content in Daphnia, grasshoppers, potato beetles, fireflies, nematodes, and rats at different ages. The findings showed that younger adult insects and animals had high enzymes and old insects and animals had low enzymes. Other studies measured the enzymes in human saliva and found a similar pattern. Old people had fewer enzymes than young people.
If his enzyme theory is true, then a person should be able to extend life indefinitely. We would expect that a person who eats only raw food and takes enzyme supplementation should be able to live much longer than people who eat cooked food and who do not take enzyme supplementation. This is a theory without any proof. The proof will not be found in animal studies or insect studies or in deductive reasoning, but in actual research conducted in human subjects over the course of a lifetime. I will be glad to be corrected if I am wrong, but I am unaware of people living to the age of 120 or older, because they only ate raw food and consumed supplemental enzymes. The reduction in enzyme levels as people and other organisms age is not necessarily the one and only cause of aging or death.

Cooking and Processing of Proteins, Carbohydrates, and Fats

Main Point 4: Cooking destroys the enzymes in raw food, which forces the body to produce more of its own digestive enzymes than would otherwise be necessary to digest the food.
Dr. Howell states,
The secret of the good health of the carnivorous Eskimo is not that he eats meat, but that he forbids his personal enzymes to digest all of it. We can do the same with proteins, carbohydrates, and fats from plant foods. (page 47, Enzyme Nutrition)
I will accept the resources sited by Dr. Howell that Eskimos allowed the process of autolysis and bacterial fermentation to take place in stored meat before they consumed it. However, my problem with the preceding statement, and with the totality of the theory he is promoting, is that Dr. Howell has a presupposition that if cooking is bad for some types of food, then it is bad for all foods. He treats proteins, carbohydrates, and fats as if his enzyme theory applied identically to each type of food. For example, he does not always differentiate between the harmful effects of highly processed/refined carbohydrate and other forms of carbohydrate. He concludes that bread is bad, because it is cooked. Perhaps bread is unhealthy because it is made of highly refined carbohydrate, which almost instantly turns into sugar once it enters the body. Based on more recent research, it is clear that most people today have a fundamental problem with their metabolism because of the large quantities of carbohydrates found in the typical American diet. This problem manifests in the high rates of obesity and metabolic syndrome. The problem is not caused by the cooking of the carbohydrates. Rather the problem is the quantity consumed and the highly refined and denatured quality of the carbohydrates.
Dr. Howell very clearly articulated the problem with one carbohydrate: white sugar. He called it a skeletal food. But at the time he wrote his book, he did not seem to understand the rapid conversion process of other forms of carbohydrate into sugars. We now know that the cooking of carbohydrate is much less important than the actual nature of carbohydrate itself, especially for people with damaged digestive systems.

Enzymes are the Last and Final Revelations in Nutritional Knowledge

Dr. Howell stated,
In 1932, when I discovered food enzymes, I counted myself with the very few in believing we possessed the last and final revelations in nutritional knowledge. (page 121)
Among the many thousands of species of creatures living on this earth, only humans and some of their domestic animals try to live without food enzymes. And only these transgressors of nature’s laws are penalized with defective health. We cannot ascribe poor human health to vitamin or mineral deficiencies because foods have been fortified to the hilt with these. (page 17)
Dr Howell considers the discovery of enzymes to be more important than all other dietary factors. He bases human health on the presence or absence of enzymes in the diet and in the body. It is short-sighted to ascribe health or illness to only one factor such as enzymes.  And dangerous to assume that food fortified with synthetic vitamins and dead minerals will support health. Many important vitamins have been discovered since 1932. Our modern agricultural methods have diminished the vitamin and mineral content of food and have added toxic ingredients that are making us all sicker. A simple reliance on enzymes will not correct the mineral and vitamin deficiencies of low quality food.

Man should have Built-in Cooking Equipment

Let the reader consider that a human baby, like an infant animal, is given raw food having a full complement of enzymes, from the breasts of its mother. If it needed cooked food for survival, it would have been provided with it. But in fact, a newborn infant has no need for cooked food. A cooking stove, which is a human invention, does not come permanently attached as a part of the anatomy of a newly born infant! (page 71, Enzyme Nutrition)
This is an interesting argument. Thus, we could also say, if a human being required clothing for warmth, we would be born wearing clothing and would not need to manufacture it. I agree that a new born baby needs only the milk of its mother, but it seems rather silly to put forth the argument that the lack of a built in stove in our anatomy means that we should not cook food later in life.

Food should be Pure and Unadulterated

no one has the knowledge to say that taking something away from food is ”safe,” or adding a foreign element to food is ”safe. (page 71, Enzyme Nutrition)
There is considerable wisdom in the preceding statement. The modern agribusiness model and corporate genetic engineering programs assume that people possess the wisdom necessary to fundamentally alter food for the sake of profitability without harm to our health. Dr. Howells’s preceding statement reflects his passion for not disturbing the purity of natural food. This is noteworthy.

Cancer and Heart Disease are the result of Disturbed Metabolism and the loss of Food Enzymes

It is decidedly unbecoming for those possessing the tools of science to close their eyes to the possibility that those diseases which are human trademarks, such as cancer and heart disease, are the products of disturbed metabolism induced partly by the hidden machinations of food enzyme deficiency. (page 71, Enzyme Nutrition)
Dr. Howell had an accurate view on many aspects of nutrition. His condemnation of white sugar should be a clear and powerful warning to everyone who reads his book. Also, his promotion of raw milk continues to stand the test of time, not only because of the enzyme content of raw milk, but because of the entire network of beneficial nutrients contained in raw milk and other raw dairy products, which he did not discuss. His elevation of enzymes to an exalted position above all other dietary factors cannot be supported in the area of heart disease and cancer given recent research. Recent research is confirming that the high incidence of heart disease is linked to prolonged consumption of refined carbohydrates, and cancer is linked to prolonged consumption of hydrogenated fat and other industrial oils. The problem is not cooked carbohydrate or cooked oils; the problem is highly processed and denatured industrial food.

The Perversion of Food by Cooking Leads to Obesity and Poor Health

If utilization of raw foodstuffs proceeded at a normal rate for these millions of years and we step in and do something to food, such as cooking it, which increases its utilization and absorption beyond the normal, this amounts to a perversion. If obesity is the result, it certainly is not wholesome. And it does not require deep insight to perceive that the evil consequences of such an assault on the endocrine balance may later hand us a legacy of many apparently unrelated pathological entities. (page 73, Enzyme Nutrition)
Even after reading his book, I was not convinced that his enzyme theory was true. I just could not make the leap from the weak research data that he offered to his conclusions. I remain unconvinced that cooking is a perversion. There is a great difference between apparent correlation and actual causation. Much of Dr. Howell’s theories are based on observed relationships, which he considers to be causative. Causation requires the isolation of research variables to eliminate other possible causes, which might be stronger than his enzyme theory for life and longevity. However, I must agree wholeheartedly with his last statement, which should cause us to closely examine the health of Americans.

Widespread obesity is one of the marks of a culture in dietary distress and nutritional decline. I do not believe that the cooking of food is the cause of obesity and illness in America. Rather it is the high carbohydrate/low fat diet (filled with omega 6 oils, processed food, and genetically modified organisms) which is bringing us down to the pit of poor health and needless suffering. There are many diets that produce improvements in health. The key factor is not enzymes, but the elimination of unhealthy food. When highly refined carbohydrate foods and unhealthy oils are removed from the diet, then health will improve.

SUMMARY

Dr. Howell’s enzyme theories do not stand up to close examination. He did not present evidence to fully support his theory when he wrote his book, and such scientific evidence is still lacking. In order for me to be convinced of his theory, I would need to see scientific evidence that proves that the enzymes in raw food actually assist with digestion when food is eaten. I would need to see proof that we actually have a finite amount of enzymes and that the conservation of those enzymes will extend life. I would need to see actual research that shows that it takes more digestive enzymes to digest cooked food than is needed to digest raw food.
Regarding his last point that enzymes actually contain the life force that gives life to plants and animals, I think he is quite wrong on this point. If it was true that enzymes are life, then those who are manufacturing enzymes would also be manufacturing life itself. Enzymes are critical to multiple life processes, but they are not life itself.
